Coffee is typically at its most vibrant within 2-3 weeks following roast. During this window, the aromatics and flavor complexity are at their strongest.

Over time, exposure to oxygen gradually softens those characteristics.

What Is Degassing?

After roasting, coffee naturally releases carbon dioxide. This process is called degassing.
